Originally from the UK, Chef Adam Harrison has a passion for wild food, something he first discovered while exploring the English countryside. Adam moved to New Zealand ten years ago and made the South Island his home, diving deeper into his love for foraging. He quickly recognized and reconnected with many of the same plants introduced to New Zealand by early settlers, allowing him to expand his expertise in wild food.
Thanks to his love of foraging, Adam’s cooking style thrived, and he earned a chef’s hat while leading the kitchen at The Sherwood in Queenstown. His work at The Sherwood showcased his ability to create dishes that were both innovative and rooted in nature’s bounty.
Now based in Christchurch, Adam continues to let the land and its offerings inspire his cuisine. He is the visionary behind Waild, a unique dining concept that celebrates foraged food and wild game. Waild brings the story of wild food to life, offering guests an opportunity to explore uncharted culinary territory. By blending natural ingredients with modern elegance, Adam creates dining experiences that are as memorable as they are delicious.
Adam’s passion for foraging, sustainability, and creative cooking sets him apart, inspiring people across New Zealand to reconnect with food and nature. We’re especially excited about the savoury snack menu he’s putting together for our high tea event—it’s sure to be packed with innovative and delicious bites inspired by the incredible food region of Hawke’s Bay.
