Lance Canning

Lance grew up in Whanganui, Aotearoa.

Moved to Australia working in various hotels and restaurants including Head Chef at Orpheus Island Resort on the barrier reef.

One year with the Disney Cruise line in Florida followed by a year as a Chef at Scott Base Antarctica.

Moving from the ice desert to sand desert by working as an inflight Chef for Etihad in the UAE for 5 years, preparing meals & matching wines in the first-class cabin. A great culinary experience with cooking onboard and dining out all over the world.

Four years working with Heritage Expeditions on the “Kromnov”, a Russian crewed icebreaker with seasons in far east Russia, the Pacific and Antarctica, also the sub-Antarctic islands. Extensive travel after the Russian seasons exploring the Kamchatka peninsula and the Trans-Siberian railway to Moscow.

Back to Antarctica for another year followed by shorter contracts to deep field camps on the outer Ross Sea ice shelf between Scott Base and the South Pole.

Brought home by the invasion of the Ukraine, now at Clearview Estate happy to be working with great wine and fresh food again and still by the ocean.
